Gorgonzola Stuffed Pork Chops
Delicious thick cut pork loin chops stuffed with rich Gorgonzola Cheese and Fresh Pears, slow roasted in the oven
keeping the chop moist and succulent.

Orange, Garlic, and Ginger Pork
Lean Pork Loin that has marinated and basted with orange, garlic, and ginger, and slow roasted forming a
delicious crusty exterior and a perfectly moist & lean interior.

Raspberry & Chipotle Grilled Pork Chops
This thick cut bone in chop, is sure to please.  We marinate the chops with our house made raspberry & chipotle
vinaigrette, and grill them with a hint of pecan smoke creating the perfect blend of sweet, heat, and smoke.

Pork Carnitas
Pork butt roast cubed and grilled with tomatoes, dried Chiles, cumin, garlic, spices, and then slow cooked until
tender and delicious.  Served with tortillas.

Slow cooked pit smoked ham that melts in your mouth.

Roasted Rubbed Brisket
Trimmed Briskets that have been dry rubbed with Chef's special blend of spices, herbs, coffee, and slow roasted

Tender Smothered Mahogany Roast of Beef
Slow roasting for 10 plus hours brings all of the flavors forward with this roast.  It is just falling apart and served
smothered in home made pan gravy.

Chef's Choice Meatloaf
This Meatloaf is packed full of flavors including finely chopped peppers, onion, thyme, garlic, topped with tomato
ketchup, and browned to a crusty & juicy perfection.  Served with home made pan gravy.


Red Wine & Rosemary Braised Short Ribs
Short cut beef ribs brushed with tomato sauce & spice and browned, then we smother them red wine, garlic
cloves, fresh rosemary and slow bake them until the meat almost falls off the bone. Served in the red wine &
rosemary reduction.

Sea Salt & Cracked Pepper Prime Rib
Mouth watering Prime Rib rubbed with garlic, and coated with coarse Himalayan Pink Sea Salt, toasted & cracked
pepper corns, and roasted to your exact specifications.  Served with natural Au Jux & fresh grated horseradish
cream.


Course Mustard & Pepper Roasted Filet Mignon
Tender and succulent Filet marinated with coarse mustard, pepper corns, olive oil, garlic and thyme, and quickly
roasted to your exact specifications.  Can be served with your choice of sauce.

We grill to order on location.  From Sliders to full on mouth watering burgers, thick cut T-Bone, Hand cut aged NY
Strips, and Ribeyes, Bratwurst and Sausages....you name it and we can grill it to order.
Lamb Selections
Roasted Leg of Lamb
Boned Leg of New Zealand Lamb coated with finely chopped fresh mint, garlic, rosemary, and olive oil, marinated
over night and roasted medium to medium rare.  Served with Rosemary & Mint Sauce

Pomegranate & Red wine Rack of Lamb
Delicious rack of New Zealand sprinkled with herbs and spiced and seared golden brown, and slowly finished to
your specifications in the oven.  Served with Pomegranate & Red Wine Reduction.

Raspberry & Chipotle Lamb K-Bobs
Cubed New Zealand lamb skewered grilled, and brushed with our Chipotle & Raspberry dressing.
